So, after last posts (burnt eggs), I'm posting the results of this mornings breakfast. I had left over blueberries (great for blending soy milk and blueberries), and I'm a lover of waffles, and I'm always looking for an excuse to use my new waffle maker (thank you
William Sonoma). Anyways, yum, is how these turned out (I need practice getting use to this new camera), but try the
recipe (I just ripped it off the
Internet). Oh, and P.S. I LOVE this waffle maker. The blueberries were a little on the large size, which resulted in semi-burnt blueberries in iron, but other than that they turned out well.

BLUEBERRY WAFFLES
INGREDIENTS:
2 eggs, separated
1 1/2 cups milk
1/2 cup melted butter
2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 cup fresh or frozen blueberries, rinsed PREPARATION:
In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks; add milk and melted butter. Sift dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries. **Note: I added a bit of cinnamon...makes it taste oh so delicious.
